Carajillo is a popular dink in Mexico made with coffee and Licor 43 with a considerable amount of ice cubes. It is a cocktail that sums up a perfect meal and could be consider a drinkable dessert, at least Mexicans do.

 

The bright yellow liquor’s tasting notes include cinnamon, anise, orange blossom and vanilla, and is called Licor 43 because it’s said to have 43 secret ingredients; and comes to life with the taste of an espresso coffee.

 

The recipe is really simple, since it has three ingredients. ½ cup of brewed espresso -or decaf if it is getting late-; 2 ounces of Licor 43 and 8 ice cubes. The preparation is even more simple: pour the 2 ounces of Licor 43 over the ice and then slowly pour fresh brewed espresso. I dare you to put all the ingredients together in a shaker and work them for 20 seconds; I find the taste changes considerably, but it may be a personal preference.
